The secret is in the processing; Halo Hartume farmers are among the earliest cultivators of coffee in Ethiopia and have finessed the washed method to a tee. Approximately 167 smallholders poured their best cherries into the washing station, where they were pulped, fermented (48-56 hours), washed, and dried until they develop the most deliciously complex flavours.
