Tart-like red berry flavour and a tea-like body—that’s the delightful profile you can expect from this Ethiopian lot, courtesy of Jigesa washing station. One of 26 washing stations established by Testi Coffee and its founder Faysel A. Yonis, Jigesa enjoys daily deliveries of prime cherries produced by 500 growers from the local villages (kebele) of Dambi Uddo, Wese, and Suke. After sorting, de-pulping, and grading, the beans undergo 36-48 fermentation and washed processing. All of which makes the resulting brew that much sweeter of a cup.
